Plump mackerel and various vegetables dressed in a spicy dressing.

Steamed Mackerel2
Lemongrass2 stalks
Shallot (sliced)4 bulbs
Red Thai Chillies (sliced)2
Green Thai Chillies (sliced)4
Fish Sauce2 tsp
Lime Juice1 tbsp
Sugar½ tsp
Vegetablefor serving
Corianderfor serving
1.Break mackerel into small pieces, add to a mixing bowl.
2.Add lemongrass, shallot and chillies.
3.Season with fish sauce, lime juice and sugar. Toss everything through. Garnish with coriander and serve with vegetables.
